1 lb beef (round steak is best) sliced thin
4-6 cloves of garlic
¼ cup olive oil
1 ½ teaspoons cornstarch
¾ lb vegetables ( Brocooli, snow peas, sliced carrots etc)
¼ cup chicken stock
4 green onions cut
1 cup mushrooms
2 tablespoons of soy sauce
salt and pepper to taste
1 diced chili pepper (optional)
Directions
- Slice the beef very thin. An easy way to do this is with a sharp knife and a partially frozen piece of beef
- Put soy sauce, garlic and cornstarch in a bowl and mix. Add beef and coat. Let sit for at lease 30 minutes.
- Add 2 teaspoons oil to a hot skillet or preferable a wok
- Add mushrooms and stir for 1-2 minutes
- Remove mushrooms and set aside
- Add 2 teaspoons of oil to the wok and stir fry beef until browned. Remove and set aside
- Add 2 teaspoons of oil to wok, heat and add onions and stir fry for 1 minute then add vegetables( chili pepper if you want to add heat)
- Add chicken stock until heated
- Add beef and mushrooms and sir for 2 minutes
- Serve over rice
